Mother’s Day Strawberry Scones with Chef Traci

CREATING IN THE KITCHEN WITH CHEF TRACI:

Thank you Chef Traci for leading students and families in making scrumptious Mother’s Day Strawberry Scones last Friday, May 7th.  Alki PTA is able to provide Family and Community Enrichment events such as this one in part from a Covid-19 Relief grant awarded to Alki PTA earlier this year.

Here is a special gift from PTA to all the hardworking Mommas and Grandmothers and women who have worked tirelessly this year to be everything to everyone and more! A stress free experience in the kitchen for caretakers and their children. 

Please have the necessary ingredients ready before live event begins.

 

Here is the ingredient list:

2 cups flour and a little extra

1 Tablespoon sugar

1 Tablespoon baking powder

1 teaspoon salt

12 Tbsp unsalted butter

2 eggs + 1 egg for egg wash

1/2 cup heavy cream

1/2 cup strawberries or blueberries

The Atrium Kitchen is managed by Chef Traci Calderon of Succulent Catering & Events. The vision is to continue the Atrium Kitchen’s legacy as a community resource for a variety of food-centric events from cooking classes to team building utilizing culinary concepts to private catered events.

The Atrium Kitchen opened in December 2012 in the heart of Pike Place Market. Adjacent to the kitchen is the Atrium Floor which can accommodate 125 guests for corporate events, wedding receptions, private celebrations, Pop-Up dinners, book signings, and private music events.

Here is the recipe!  Strawberry Scones:
Ingredients:
2 cups flour, plus extra
1 tablespoon sugar, plus extra
1 tablespoon baking powder
1 teaspoon salt
12 tablespoon butter, diced and chilled
2 eggs
1⁄2 cup cream
1⁄3 cup strawberries (fresh or dried)
1 eggs plus 2 tablespoon milk for egg wash
Instructions:
1) preheat oven to 400 degrees
2) In a mixing bowl combine flour, sugar, baking powder, and salt.
3) Blend butter into flour and mix until butter is small pea size.
4) In small bowl, combine heavy cream and eggs, and add to butter-flour mixture.
5) Combine just until blended
6) Toss strawberries with 1 tablespoon flour, add to dough, mix quickly.
7) Turn dough onto floured surface and be sure it is well combined.
8) Flour your hands and a rolling pin and roll dough to 3⁄4 inch.
9) Cut into squares, then cut into a triangle.
10) Place on baking sheet lined with parchment paper.
11) Make egg wash: 1 egg beaten with 2 tablespoons water or milk
12) Brush egg wash over tops, sprinkle with sugar. Bake 20-25 minutes until fully baked.
